Who even knew there was any other than white chick peas?  Chole in Hindi, these are the ones I’m used to … in a tin.  Just to confuse things there are also dark small chickpeas, channa, and both white large and dark small chickpeas are used interchangeably in recipes and vocabulary.  The main difference is that channa are from the north and are used in Punjab cuisine, while chole are the indigenous Indian chickpeas.  Because my Indian cuisine immersion began in the north, I am accustomed to calling any chickpea masala, channa masala.  Today however it’s Chole Masala, and a recipe I adopted from Anand Prakash Yoga Ashram.  We stayed there for a week late last year and of course I had to have the cookbook to start my Indian cooking library.  The ashram kitchen prepares foods according to the Sattvic, yogic diet, adhering to Ayurvedic principles.  (More…
