hmm, i didn’t know there is such squash as ‘spaghetti squash’… looks fantastic, though! 🙂
Today I made a delicious completely plant based pasta meal! And get this, I didn’t use pasta, meat, salt or much oil!
-1 spaghetti squash (size depends on how many people you want to feed; I got a 4lb squash and it feeds 6 people!)
-1/2 a red bell pepper sliced (no seeds)
-10 mushrooms chopped
-1 yellow onion
-2 garlic cloves
-basil leaves ( I can never have enough!)
-1 tbsp. of olive oil
1. Preheat your oven to 375 F.
2. Cut your spaghetti squash in half, longways. Now spray very little olive oil (or drizzle) onto the cut side of your squash. Use basil leaves to line the sides of the squash. Place in a baking dish cut side down and place in oven for 45-50 minutes until squash is tender.
